Our ethos is, wherever possible, to use local suppliers and local produce from within the county. We have taken this to the extreme and rear own Kentish Middle White pigs - pork on the menu is from pigs reared on the field at the back of the restaurant.
We are currently developing an area of our land to rear black-feathered turkeys, which arrive in July and will be reared ready for Christmas.
We also have a kitchen garden that is constantly under development. So far we have successfully grown beetroots, runner beans, tomatoes & garlic - all have appeared on our menus.
Throughout this year our plan is to enlarge an existing, natural pond to rear ducks and turn the remainder of the land into wild flower meadow to encourage wildlife and an orchard for fruit trees to supply the restaurant.
